Rolled Turkey with Cranberries and Bacon recipe
These unusual appetizers have a holiday flare that will quickly become a seasonal staple. Turkey, cranberries, and bacon get baked together in a maple-citrus sauce for a deliciously sweet and smoky dish.
Ingredients:
4 (4-ounce) turkey breast steaks
12 slices thick bacon
Sauce:
12 ounces cranberries
1 cup maple syrup
1 cup cranberry juice
Grated zest of 1 orange
Directions:
1) Preheat oven to 375°F. Lightly grease a baking sheet.
2) Prepare the sauce: Combine all ingredients together in a medium pot over high; bring to a boil and simmer 10 minutes, until cranberries pop. Remove from heat and cool 10 minutes.
3) Pound each turkey breast to ½-inch thickness. Spread reserved cranberry sauce over one side of each breast. Roll breast up, containing cranberry sauce inside. Wrap each rolled breast inside 3 slices of bacon. Secure with cocktail sticks, if needed.
4) Place on baking sheet and bake 20 minutes, until turkey is cooked and bacon is slightly crisped. Serve warm.
