Holiday Cranberry Chocolate Cookies recipe
These holiday cookies are just what Santa ordered! Full of chocolate, fruit, and nuts, they are a complete treat all-in-one. Best served for the holidays, but thoroughly enjoyed year-round.
Ingredients:
½ cup butter, softened
½ cup packed dark brown sugar
½ cup sugar
1 egg
1 tablespoon vanilla
1 ½ cups all-purpose flour
½ teaspoon pumpkin pie spice
½ teaspoon baking soda
1 cup dried cranberries
½ cup chocolate chips
½ cup chopped toasted pecans, optional
Directions:
1) Preheat oven to 375°F. Lightly grease two baking sheets.
2) In a large bowl, beat butter and sugars together until fluffy. Add egg and vanilla; beat.
3) In a separate large bowl, stir together flour, pumpkin pie spice, and baking soda; add to egg mixture and stir to combine. Fold in cranberries, chocolate chips, and pecans.
4) Drop batter by the teaspoon onto prepared sheets, leaving 1-inch spaces between each cookie. Bake 8 to 10 minutes, until cookies are just golden. Cool slightly and serve.
