Cranberry Pie Parfaits recipe
These individual dessert cups are surprisingly light—just the thing after your previous weeks’ slices of rich, Thanksgiving pies.
Ingredients:
2 cups crushed graham crackers
2 cups cranberry sauce
2 cups vanilla, pumpkin, or butterscotch pudding
½ cup whipping cream
¼ cup sugar
1 teaspoon vanilla
1 teaspoon cinnamon
Directions:
1) Prepare the cinnamon whipped cream: combine whipping cream, sugar, vanilla, and cinnamon in a large bowl. Whip until thick and fluffy, about 4 minutes. Set aside.
2) Set out 4 tall parfait glasses. Fill each with alternative layers of ¼ cup graham crackers, cranberry sauce, and pudding. Repeat until all ingredients are used. Top each glass with cinnamon whipped cream. Serve immediately or chilled.
