Cranberry Pancakes recipe
Once you try these pancakes, you won’t go back to the boxed standby! These cranberry and vanilla-speckled pancakes are delicious for breakfast for a light dessert.
Ingredients:
2 cups vanilla yogurt
1 cup cranberries, chopped
1 cup yellow cornmeal
½ cup all-purpose flour
¼ cup maple syrup
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 tablespoon olive oil
Directions:
1) Whisk all ingredients except oil together in a large bowl until smooth.
2) Heat oil in a large skillet over medium. Pour batter into skillet, about ¼-cup at a time, and cook 5 minutes, turning once. The pancake is cooked when the surface is golden and bubbles. Repeat with remaining batter.
