Cranberry Compote Cracker Bites recipe
These striking appetizers are a hit for the holidays or a weekend brunch. Handheld nibs of cranberry sauce on crunchy crackers go a long way in pleasing crowds' appetites.
Ingredients:
1 tablespoon olive oil
1 large yellow onion, thinly sliced
½ cup cranberries, chopped
¼ cup port wine
1 tablespoon honey
½ teaspoon salt
20 whole grain or rye crackers, for serving
½ cup cream cheese, softened, for serving
1 tablespoon grated orange zest, for serving, optional
Directions:
1) Heat oil in a medium skillet over medium. Add onions and cook until very soft and light gold, about 15 minutes, stirring occasionally. Add cranberries, wine, honey, and salt; bring to a boil over high heat. Lower to a simmer and cook until cranberries have popped and sauce has thickened, about 10 minutes, stirring occasionally. Remove from heat.
2) To serve: Smear cream cheese over crackers and spoon cranberry compote on top. Garnish with orange zest.
