Cranberry Almond Bars recipe

Looking for a fruity snack that doubles as a light dessert? These nutty, tart cranberry almond bars are your solution.

Ingredients:

1 ½ cups sugar
2 eggs
¾ cup unsalted butter, softened
1 teaspoon vanilla
1 ¼ cups all-purpose flour
¼ cup oats
½ teaspoon cinnamon
½ teaspoon salt
2 cups cranberries
½ cup chopped toasted almonds

Directions:

1) Preheat oven to 350°F. Lightly grease a 9-inch square baking pan.

2) Beat sugar and eggs together in a large bowl until fluffy. Add butter and vanilla; beat.

3) In a large bowl, stir together flour, oats, cinnamon, and salt. Add to egg mixture and stir until blended. Fold in cranberries and nuts.

4) Pour into prepared pan. Bake about 60 minutes, until a toothpick inserted in the middle comes out clean. Transfer to a wire rack to cool completely.

Tastes very good, but took much longer to cook than one hour, and was still quite wet at the bottom even then.
