Baked Cranberry Pudding recipe

Traditional cranberry pudding is steamed and takes hours to prepare; cut hours off preparation time but lose none of the flavor in this easy baked rendition.

Ingredients:

2 cups flour
¾ cup sugar
2 teaspoons baking powder
¼ teaspoon cinnamon
¼ cup butter, melted
2/3 cup milk
1 egg, lightly beaten
2 cups finely chopped cranberries
1 teaspoon grated orange zest

Directions:

1) Preheat oven to 350°F. Lightly grease a 9-inch baking dish.

2) In a large bowl, sift flour, sugar, baking powder, and cinnamon. Add butter, milk, and egg; beat well. Stir in cranberries and orange zest.

3) Transfer mixture to prepared dish. Bake 45 minutes, until set. Cool slightly and serve.

Very good! I also prepared citrus glaze using freshly squeezed lemon and orange juices (1 each) with powdered sugar to thicken and poured it over the warm pudding. (It's more like a moist scone.) Delicious! Great for breakfast also! I baked it in an original Bundt Cake Pan and put it on a glass pedestal. Wish I had taken a picture!

I made this and it turned out pretty bitter. I would not make it again, or maybe make drastic changes.

This recipe was delicious! More like a cake than a pudding. Nice and moist and really flavorful. Plenty of cranberries.
